Triple Berry Cottage Cheese Breakfast Delight

A protein-rich breakfast bake with cottage cheese, honey, almond flour, and berries—lightly sweet and ideal for meal prep or weekend brunch.

Ingredients
  

  • 2 cups cottage cheese
  • 3 large eggs
  • ½ cup almond flour or rolled oats
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • 2 cups mixed berries e.g., ½ cup sliced strawberries, ¾ cup blueberries, ¾ cup raspberries — fresh or frozen

Instructions
 

  • Preheat to 350°F (175°C) and grease your baking dish.
  • Whisk cottage cheese, eggs, almond flour or oats, honey or maple syrup, vanilla, lemon zest, and baking powder until smooth.
  • Gently fold in fresh or frozen mixed berries.
  • Pour into dish and bake 30–35 minutes until golden and set. Test with a toothpick.
  • Let cool 10 minutes before slicing. Serve warm or chilled.
