Triple Berry Cottage Cheese Breakfast Delight
A protein-rich breakfast bake with cottage cheese, honey, almond flour, and berries—lightly sweet and ideal for meal prep or weekend brunch.
- 2 cups cottage cheese
- 3 large eggs
- ½ cup almond flour or rolled oats
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 teaspoon baking powder
- 2 cups mixed berries e.g., ½ cup sliced strawberries, ¾ cup blueberries, ¾ cup raspberries — fresh or frozen
Preheat to 350°F (175°C) and grease your baking dish.
Whisk cottage cheese, eggs, almond flour or oats, honey or maple syrup, vanilla, lemon zest, and baking powder until smooth.
Gently fold in fresh or frozen mixed berries.
Pour into dish and bake 30–35 minutes until golden and set. Test with a toothpick.
Let cool 10 minutes before slicing. Serve warm or chilled.
