Throw-Together Mexican Casserole

This easy Throw-Together Mexican Casserole combines bold flavors and cheesy goodness, making it the ultimate weeknight dinner that’s ready in no time.

Ingredients
  

  • 1 lb ground turkey or beef
  • 1 small onion diced
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed 15 oz
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 can diced tomatoes with green chilies 14 oz
  • 1 cup salsa
  • 1 tbsp taco seasoning
  • ½ tsp chili powder optional, for extra heat
  • 2 cups shredded cheddar cheese
  • Chopped fresh cilantro for garnish

Instructions
 

  • Preheat oven to 375°F (190°C). Brown ground turkey or beef with onion in a skillet over medium heat. Drain any excess fat.
  • Stir in cooked rice, black beans, corn, diced tomatoes, salsa, taco seasoning, and chili powder. Cook until heated through.
  • Transfer mixture to a greased casserole dish and spread evenly.
  • Top with shredded cheddar cheese, spreading evenly across the dish.
  • Bake for 15–20 minutes or until cheese is melted and bubbly.
  • Garnish with fresh cilantro. Serve warm with tortilla chips, sour cream, or guacamole.
