Taco Bell Beefy Melt Burrito
A warm, cheesy, flavor-packed burrito inspired by Taco Bell’s Beefy Melt—made at home with simple ingredients, hearty beef, melty cheese, and creamy refried beans.
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese cheddar or Mexican blend
- 4 large flour tortillas
- 1 cup refried beans
- ½ cup diced tomatoes
- ¼ cup sour cream
Cook the beef in a skillet over medium heat until browned, about 7–8 minutes. Drain any excess fat, then stir in taco seasoning and a splash of water. Simmer until the sauce thickens and coats the meat.
Warm tortillas in a separate pan for 15–20 seconds per side until soft and flexible. Keep covered to stay warm.
Spread refried beans down the center of each tortilla, then add seasoned beef, diced tomatoes, and shredded cheese.
Fold the sides in and roll tightly. Place seam-side down in the skillet and heat on low for 1–2 minutes per side until the cheese melts and the tortilla turns lightly golden.
Serve warm with a dollop of sour cream on top or on the side for dipping.
