Taco Bell Beefy Melt Burrito

A warm, cheesy, flavor-packed burrito inspired by Taco Bell’s Beefy Melt—made at home with simple ingredients, hearty beef, melty cheese, and creamy refried beans.

Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 large flour tortillas
  • 1 cup refried beans
  • ½ cup diced tomatoes
  • ¼ cup sour cream

Instructions
 

  • Cook the beef in a skillet over medium heat until browned, about 7–8 minutes. Drain any excess fat, then stir in taco seasoning and a splash of water. Simmer until the sauce thickens and coats the meat.
  • Warm tortillas in a separate pan for 15–20 seconds per side until soft and flexible. Keep covered to stay warm.
  • Spread refried beans down the center of each tortilla, then add seasoned beef, diced tomatoes, and shredded cheese.
  • Fold the sides in and roll tightly. Place seam-side down in the skillet and heat on low for 1–2 minutes per side until the cheese melts and the tortilla turns lightly golden.
  • Serve warm with a dollop of sour cream on top or on the side for dipping.
