Stuffed Chicken Breasts
This recipe takes things to the next level with chorizo and mozzarella filling, all wrapped in crispy bacon.
- 1 chicken breast butterflied
- BBQ seasoning
- 3 slices fresh mozzarella
- 3-4 oz chorizo
- 3-4 slices bacon
- Pepper to taste
- Chopped parsley to garnish optional
Preheat oven or smoker to 275°F.
Butterfly the chicken breast and season the inside with BBQ rub.
Layer mozzarella and chorizo inside the chicken, fold it closed, and season the outside.
Wrap the chicken with bacon, overlapping slightly.
Smoke or bake until the internal temp reaches 165°F.
Let it rest for 4-5 minutes, then slice and enjoy!
