Strawberry Piña Colada Lava Flow

Strawberry Piña Colada Lava Flow combines coconut, pineapple, rum, and a strawberry swirl into a fruity, eye-catching summer drink.

Ingredients
  

For the Piña Colada Base:

  • 1 cup ice
  • ½ cup pineapple juice
  • ¼ cup cream of coconut such as Coco Lopez
  • 2 oz coconut rum or white rum
  • Optional: 1 tablespoon heavy cream for added richness

For the Strawberry Lava:

  • ¾ cup frozen strawberries
  • 1 oz strawberry daiquiri mix or 1 tablespoon strawberry syrup
  • 1 oz rum optional, but adds depth and kick
  • 2 tablespoons pineapple juice

For Garnish:

  • Pineapple wedges
  • Whole strawberries
  • Optional: cocktail umbrellas or pineapple fronds for a festive touch

Instructions
 

  • Blend frozen strawberries, strawberry daiquiri mix (or syrup), pineapple juice, and optional rum until smooth. Pour into a small pitcher and set aside.
  • Rinse the blender. Add ice, pineapple juice, cream of coconut, rum, and optional heavy cream. Blend until smooth and creamy.
  • Pour half the strawberry mix into each glass. Slowly pour the piña colada blend on top. Finish with a drizzle of the remaining strawberry mix for that lava flow effect. Don’t stir.
  • Garnish with a pineapple wedge and strawberry. Add a fun umbrella or pineapple frond. Insert a straw and serve right away while it’s icy cold.
