Strawberry Piña Colada Lava Flow
Strawberry Piña Colada Lava Flow combines coconut, pineapple, rum, and a strawberry swirl into a fruity, eye-catching summer drink.
For the Piña Colada Base:
- 1 cup ice
- ½ cup pineapple juice
- ¼ cup cream of coconut such as Coco Lopez
- 2 oz coconut rum or white rum
- Optional: 1 tablespoon heavy cream for added richness
For the Strawberry Lava:
- ¾ cup frozen strawberries
- 1 oz strawberry daiquiri mix or 1 tablespoon strawberry syrup
- 1 oz rum optional, but adds depth and kick
- 2 tablespoons pineapple juice
For Garnish:
- Pineapple wedges
- Whole strawberries
- Optional: cocktail umbrellas or pineapple fronds for a festive touch
Blend frozen strawberries, strawberry daiquiri mix (or syrup), pineapple juice, and optional rum until smooth. Pour into a small pitcher and set aside.
Rinse the blender. Add ice, pineapple juice, cream of coconut, rum, and optional heavy cream. Blend until smooth and creamy.
Pour half the strawberry mix into each glass. Slowly pour the piña colada blend on top. Finish with a drizzle of the remaining strawberry mix for that lava flow effect. Don’t stir.
Garnish with a pineapple wedge and strawberry. Add a fun umbrella or pineapple frond. Insert a straw and serve right away while it’s icy cold.
