St. Patrick's Day Shamrock Shake Pie
This St. Patrick’s Day Shamrock Shake Pie is a creamy, minty dessert with a chocolate cookie crust and a smooth, no-bake filling. It’s a festive twist on the classic Shamrock Shake, topped with whipped cream, chocolate syrup, and a cherry for the perfect holiday treat.
- 1½ cups chocolate cookie crumbs
- 3 tbsp unsalted butter
- 2 cups vanilla ice cream
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- 1 tsp peppermint extract
- 1 cup whipped cream
- Green food coloring
- Chocolate syrup or fudge sauce
- Green sprinkles or crushed cookies
- 1 maraschino cherry
Make the crust: Mix chocolate cookie crumbs and melted butter until combined. Press into a 9-inch pie dish and chill in the fridge.
Prepare the filling: Beat vanilla ice cream, heavy whipping cream, powdered sugar, and peppermint extract until smooth. Add green food coloring and mix until evenly tinted.
Assemble the pie: Pour the filling into the chilled crust, smooth the top, and tap the dish gently to remove air bubbles.
Chill: Cover and refrigerate for at least 4–6 hours, or overnight for the best texture.
