St. Patrick's Day Shamrock Shake Pie

This St. Patrick’s Day Shamrock Shake Pie is a creamy, minty dessert with a chocolate cookie crust and a smooth, no-bake filling. It’s a festive twist on the classic Shamrock Shake, topped with whipped cream, chocolate syrup, and a cherry for the perfect holiday treat.

Ingredients
  

  • cups chocolate cookie crumbs
  • 3 tbsp unsalted butter
  • 2 cups vanilla ice cream
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 tsp peppermint extract
  • 1 cup whipped cream
  • Green food coloring
  • Chocolate syrup or fudge sauce
  • Green sprinkles or crushed cookies
  • 1 maraschino cherry

Instructions
 

  • Make the crust: Mix chocolate cookie crumbs and melted butter until combined. Press into a 9-inch pie dish and chill in the fridge.
  • Prepare the filling: Beat vanilla ice cream, heavy whipping cream, powdered sugar, and peppermint extract until smooth. Add green food coloring and mix until evenly tinted.
  • Assemble the pie: Pour the filling into the chilled crust, smooth the top, and tap the dish gently to remove air bubbles.
  • Chill: Cover and refrigerate for at least 4–6 hours, or overnight for the best texture.
  • Decorate and serve: Top with whipped cream, drizzle with chocolate syrup, and sprinkle with green decorations. Finish with a maraschino cherry and serve chilled.
