Spicy Zucchini Corn Tacos are filled with sautéed zucchini, sweet corn, warm spices, lime, and fresh toppings.

- 2 medium zucchini, diced
- 1 1/2 cups corn
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1 tbsp lime juice
- 8 small tortillas
- 1 avocado
- Fresh cilantro
Heat a large skillet over medium-high heat and add the olive oil once the pan is fully hot.
Add the diced zucchini in a single layer and cook for 4–5 minutes, stirring only occasionally so some pieces develop browned edges.
Add the corn, chili powder, and cumin, then continue cooking for another 3–4 minutes until the corn becomes lightly charred.
Remove the skillet from the heat, squeeze fresh lime juice over the vegetables, and toss gently to coat.
Warm the tortillas in a dry skillet or microwave until flexible and soft enough to fold without cracking.
Spoon the zucchini and corn mixture into each tortilla, then top with sliced avocado and fresh cilantro.
Serve immediately with extra lime, salsa, shredded cabbage, or a little sour cream if desired.
