- 1 tbsp olive oil
- 1 medium onion
- 2 cloves garlic
- 4 cups chicken or vegetable broth
- 2 cups diced potatoes
- 1 cup fresh or pickled jalapeños
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 1 ripe avocado
- 1 tbsp lime juice
- Fresh cilantro for garnish
Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 5 minutes, stirring occasionally.
