Southern-Style Honey Butter Cornbread Poppers are bite-sized, golden brown mini cornbread muffins infused with rich honey butter. Soft on the inside, slightly crisp on the edges, and bursting with sweet, buttery flavor, they’re perfect for snacking, serving with chili, or as a delicious side dish.

Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ¼ cup honey
  • ½ cup butter
  • 2 eggs

Instructions
 

  • Preheat the oven: Set your oven to 400°F (200°C) and grease a mini muffin pan.
  • Mix the dry ingredients: In a large bowl, stir together the cornmeal, flour, sugar, baking powder, and salt.
  • Whisk the wet ingredients: In a separate bowl, mix the milk, honey, melted butter, and eggs until smooth.
  • Combine the mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Fill the muffin pan: Spoon the batter into the muffin cups, filling each about ¾ full.
  • Bake: Place in the oven and bake for 12–15 minutes, until golden brown and a toothpick comes out clean.
  • Brush with honey butter: Mix melted butter with honey and brush over the warm poppers before serving.
