S'mores Cookies

These easy S'mores Cookies bring the delicious flavors of the campfire treat into a soft, gooey cookie.

Ingredients
  

  • 1/2 cup softened butter (1 stick)
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 1/4 cups all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 5-6 Mallow Pies or graham crackers and marshmallows
  • 1/2 bar Hershey mild sweet chocolate

Instructions
 

  • Cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
  • In a separate bowl, mix the flour, baking soda, and salt.
    Gradually combine with the wet ingredients and fold in the chocolate chips.
  • Chill the dough for 15 minutes, then scoop and flatten it.
  • Place a Mallow Pie (or marshmallow and graham) on top and seal with another scoop of dough. Then top with a piece of Hershey chocolate.
  • Chill the assembled cookies for 30 minutes or overnight.
  • Preheat the oven to 375°F (190°C) and bake the cookies for 17 minutes, or until golden brown on the edges.
