S'mores Cookies
These easy S'mores Cookies bring the delicious flavors of the campfire treat into a soft, gooey cookie.
- 1/2 cup softened butter (1 stick)
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 tsp vanilla extract
- 1 egg
- 1 1/4 cups all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup chocolate chips
- 5-6 Mallow Pies or graham crackers and marshmallows
- 1/2 bar Hershey mild sweet chocolate
Cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
In a separate bowl, mix the flour, baking soda, and salt. Gradually combine with the wet ingredients and fold in the chocolate chips. Chill the dough for 15 minutes, then scoop and flatten it.
Place a Mallow Pie (or marshmallow and graham) on top and seal with another scoop of dough. Then top with a piece of Hershey chocolate.
Chill the assembled cookies for 30 minutes or overnight.
Preheat the oven to 375°F (190°C) and bake the cookies for 17 minutes, or until golden brown on the edges.
