- 2 lbs beef chuck cut into bite-size chunks
- 2 tablespoons olive oil
- 1 large onion diced
- 3 cloves garlic minced
- 2 cups roasted green chiles chopped
- 1½ lbs Yukon Gold potatoes peeled and cubed
- 4 cups beef broth
- 1 cup diced tomatoes optional
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- Salt and black pepper to taste
- 1 tablespoon flour optional for thickening
- Fresh cilantro or parsley for garnish
Heat olive oil in a large pot over medium-high heat.
Season and brown beef in batches, then set aside.
