Smoky BBQ Bacon Melt Eat
A smoky, cheesy melt packed with brisket, sharp cheddar, and crispy bacon, finished with rich BBQ sauce and grilled to golden perfection.
- 4 slices Texas toast or sourdough
- ½ lb smoked brisket
- 6 slices crispy bacon
- 4 slices sharp cheddar cheese
- 2 tbsp BBQ sauce
- 2 tbsp butter
Cook the bacon: Fry in a skillet over medium heat until crispy. Drain on a paper towel.
Warm the brisket: Heat leftover brisket in a pan over low heat with 1 tablespoon of BBQ sauce for added moisture and flavor.
Assemble the sandwich: Butter one side of each bread slice. On the unbuttered side, layer brisket, cheddar cheese, crispy bacon, a drizzle of BBQ sauce, and another slice of cheddar. Top with another bread slice, buttered side facing out.
Grill to perfection: Cook in a skillet over medium-low heat for 3-4 minutes per side, pressing lightly. Flip when golden brown and cook until the cheese melts.
Serve: Let cool slightly, slice, and dig into the smoky, cheesy goodness!
