Smoked Brisket Grilled Cheese
Smoked Brisket Grilled Cheese is the ultimate comfort food mashup—gooey melted cheese, smoky brisket, and crispy golden bread grilled to perfection. It’s easy to make and impossible to resist.
- 2 slices thick-cut bread sourdough, Texas toast, or any sturdy bread
- 1 cup smoked brisket shredded or sliced
- 2 slices cheddar cheese or mix with Swiss or provolone
- 2 tbsp butter for grilling
- 1 tbsp barbecue sauce optional
- ¼ cup caramelized onions optional
- Pickles or jalapeños optional garnish
Shred or slice leftover brisket into bite-sized pieces. No leftovers? Use store-bought smoked brisket. Toss with 1 tbsp barbecue sauce for added flavor.
Butter one side of each bread slice. On the unbuttered side, layer cheese, brisket, and more cheese. Add caramelized onions or pickles if desired. Top with the second slice, buttered side out.
Heat a skillet over medium. Cook the sandwich for 3–4 minutes per side, pressing slightly. Flip once golden and crisp. Cook until the cheese melts and both sides are toasted.
Let rest for 1 minute. Slice in half and enjoy with chips, slaw, or a fresh salad.
