Slow Cooker John Wayne Casserole

A comforting layered casserole made with crispy tater tots, seasoned beef, creamy cheese mixture, and slow cooked to rich, hearty perfection.

Ingredients
  

For the base and filling:

  • 32 oz frozen tater tots
  • 1 lb ground beef
  • 2 cups frozen peppers and onions
  • 1 oz taco seasoning mix
  • cup water

For the creamy layer:

  • 16 oz sour cream
  • 2 cups shredded cheddar cheese divided

For topping:

  • Scallions chopped
  • Tomatoes diced

Instructions
 

  • Spray slow cooker with nonstick spray.
  • Spread frozen tater tots evenly on the bottom.
  • Cook ground beef with peppers and onions for 6–8 minutes until browned; drain grease.
  • Add taco seasoning and water, simmer 5 minutes until slightly thickened.
  • Pour meat mixture evenly over tater tots.
  • Mix sour cream with 1 cup cheese until smooth.
  • Spread sour cream mixture over the meat layer.
  • Cover and cook on low for 4 hours.
  • Sprinkle remaining cheese on top and let melt.
  • Top with scallions and tomatoes, serve warm.
