Slow Cooker John Wayne Casserole
A comforting layered casserole made with crispy tater tots, seasoned beef, creamy cheese mixture, and slow cooked to rich, hearty perfection.
For the base and filling:
- 32 oz frozen tater tots
- 1 lb ground beef
- 2 cups frozen peppers and onions
- 1 oz taco seasoning mix
- ⅔ cup water
For the creamy layer:
- 16 oz sour cream
- 2 cups shredded cheddar cheese divided
For topping:
- Scallions chopped
- Tomatoes diced
Spray slow cooker with nonstick spray.
Spread frozen tater tots evenly on the bottom.
Cook ground beef with peppers and onions for 6–8 minutes until browned; drain grease.
Add taco seasoning and water, simmer 5 minutes until slightly thickened.
Pour meat mixture evenly over tater tots.
Mix sour cream with 1 cup cheese until smooth.
Spread sour cream mixture over the meat layer.
Cover and cook on low for 4 hours.
Sprinkle remaining cheese on top and let melt.
Top with scallions and tomatoes, serve warm.
