Slow Cooker Chicken Cordon Bleu

A healthier take on the French classic, with no frying and easy prep. Perfect for busy weeknights or a special family dinner, this recipe lets the slow cooker do all the work while you enjoy the rich, indulgent flavors!

Ingredients
  

For the chicken:

  • 4 chicken breasts boneless skinless
  • 4 slice Swiss cheese
  • 4 slice chicken ham or turkey ham
  • 1 cup seasoned breadcrumbs
  • Salt and pepper to taste

For the sauce:

  • 1 can condensed cream of chicken soup 10.5 oz
  • ½ cup milk
  • 1 tbsp Dijon mustard optional
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp black pepper

Instructions
 

  • Cut a pocket into each chicken breast and stuff with 1 slice of Swiss cheese and 1 slice of ham.
  • Coat each breast with seasoned breadcrumbs, pressing firmly for an even layer.
  • Grease the slow cooker and place the stuffed chicken, breadcrumb side up.
  • Whisk together soup, milk, mustard, garlic powder, onion powder, and black pepper. Pour over the chicken.
  • Cover and cook on low for 4-5 hours or high for 2-3 hours, until internal temp is 165°F (74°C).
  • For crispy breadcrumbs, broil the chicken for 2-3 minutes before serving. Drizzle with sauce and serve.
