Slow Cooker Chicken Cordon Bleu
A healthier take on the French classic, with no frying and easy prep. Perfect for busy weeknights or a special family dinner, this recipe lets the slow cooker do all the work while you enjoy the rich, indulgent flavors!
For the chicken:
- 4 chicken breasts boneless skinless
- 4 slice Swiss cheese
- 4 slice chicken ham or turkey ham
- 1 cup seasoned breadcrumbs
- Salt and pepper to taste
For the sauce:
- 1 can condensed cream of chicken soup 10.5 oz
- ½ cup milk
- 1 tbsp Dijon mustard optional
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp black pepper
Cut a pocket into each chicken breast and stuff with 1 slice of Swiss cheese and 1 slice of ham.
Coat each breast with seasoned breadcrumbs, pressing firmly for an even layer.
Grease the slow cooker and place the stuffed chicken, breadcrumb side up.
Whisk together soup, milk, mustard, garlic powder, onion powder, and black pepper. Pour over the chicken.
Cover and cook on low for 4-5 hours or high for 2-3 hours, until internal temp is 165°F (74°C).
For crispy breadcrumbs, broil the chicken for 2-3 minutes before serving. Drizzle with sauce and serve.
