Savory-Sweet Chicken Pineapple Fried Rice
Savory-sweet pineapple fried rice with marinated chicken, veggies, and jasmine rice—quick, vibrant, and full of sunny flavor.
- 3 cups cooked jasmine rice cold, day-old
- ½ lb diced chicken thighs or breast
- 1 cup mixed veggies peas, carrots, corn
- 1 cup diced pineapple
- ½ cup diced onion or shallots/green onions
- 2 cloves garlic minced
- 2 Tbsp neutral cooking oil
- 1½ Tbsp soy sauce
- 1 tsp fish or oyster sauce
- ¼ tsp salt
- ¼ tsp black pepper
- For Marinade:
- 2 tsp soy sauce
- 2 tsp sesame or neutral oil
- 1 tsp cornstarch
- ¼ tsp baking soda
Break up cold rice. Marinate sliced chicken with soy sauce, sesame oil, cornstarch, and baking soda for 10–15 minutes.
Heat 1 Tbsp oil over medium-high. Stir-fry chicken until golden and cooked through, 5–6 minutes. Set aside.
In the same pan, add remaining oil. Cook garlic and onion for 1 minute until fragrant.
Stir in veggies and pineapple. Cook 3–4 minutes to warm and reduce moisture.
Push veggies aside. Add rice, soy sauce, fish sauce, salt, and pepper. Toss everything together for 3 minutes.
Add chicken back in. Mix well and serve hot.
