Savory-Sweet Chicken Pineapple Fried Rice

Savory-sweet pineapple fried rice with marinated chicken, veggies, and jasmine rice—quick, vibrant, and full of sunny flavor.

Ingredients
  

  • 3  cups cooked jasmine rice cold, day-old
  • ½  lb diced chicken thighs or breast
  • 1  cup mixed veggies peas, carrots, corn
  • 1  cup diced pineapple
  • ½  cup diced onion or shallots/green onions
  • 2  cloves garlic minced
  • 2  Tbsp neutral cooking oil
  • 1½  Tbsp soy sauce
  • 1  tsp fish or oyster sauce
  • ¼  tsp salt
  • ¼  tsp black pepper
  • For Marinade:
  • 2  tsp soy sauce
  • 2  tsp sesame or neutral oil
  • 1  tsp cornstarch
  • ¼  tsp baking soda

Instructions
 

  • Break up cold rice. Marinate sliced chicken with soy sauce, sesame oil, cornstarch, and baking soda for 10–15 minutes.
  • Heat 1 Tbsp oil over medium-high. Stir-fry chicken until golden and cooked through, 5–6 minutes. Set aside.
  • In the same pan, add remaining oil. Cook garlic and onion for 1 minute until fragrant.
  • Stir in veggies and pineapple. Cook 3–4 minutes to warm and reduce moisture.
  • Push veggies aside. Add rice, soy sauce, fish sauce, salt, and pepper. Toss everything together for 3 minutes.
  • Add chicken back in. Mix well and serve hot.
