Step 1: In a large pan over medium heat, add olive oil to the pan over medium heat and add onions, and cook until slightly soft.

Step 3: Add sausage meat, break up with a spatula, and cook until it’s no longer pink, stirring frequently.
Step 4: Add the tomato paste, diced tomatoes, Italian seasoning, salt, pepper, cream cheese, and chicken broth.
Step 5: Stir in heavy cream and Parmesan cheese to the sausage soup.
Step 6: Cover with a lid and reduce heat to low, allowing the mixture to simmer for 5 minutes.
Step 7: Garnish with fresh chopped parsley and more parmesan.
