Sausage French Toast Roll-Ups

Sausage French Toast Roll-Ups are a savory twist on classic French toast. Ground sausage, seasoned with spices and cheese, is wrapped in flattened bread, dipped in egg mixture, and pan-fried to golden perfection. Perfect for breakfast or brunch, they’re a delicious, crowd-pleasing treat.

Ingredients
  

For the Roll-Ups:

  • 4 slices of bread preferably thick-cut
  • ½ lb ground breakfast sausage mild or spicy
  • 2-3 large eggs
  • ½ cup milk
  • Salt and pepper to taste
  • ½ tsp garlic powder
  • Butter for pan-frying

Optional Flavor Boosters:

  • ½ cup shredded cheddar or pepper jack cheese
  • 2 tbsp chopped chives or parsley
  • Hot sauce for a kick

Instructions
 

  • Trim the crusts and flatten each slice of bread with a rolling pin.
  • Brown the ground sausage in a skillet over medium heat, breaking it apart as it cooks. Drain excess grease and set aside to cool.
  • Spoon sausage onto one end of each flattened bread slice. Add cheese if desired, then roll tightly and seal the seam.
  • Whisk eggs, milk, salt, pepper, and garlic powder. Dip each roll-up in the mixture, letting the excess drip off.
  • Heat butter in a skillet over medium heat. Cook roll-ups seam-side down for 2-3 minutes per side, until golden and crispy.
