These Sausage, Egg, and Cheese Breakfast Roll-Ups are quick, satisfying, and packed with savory flavor—perfect for busy mornings, meal prep, or a hearty brunch.

Ingredients
  

For the filling:

  • 4 large eggs
  • 1 tbsp milk optional, for fluffier eggs
  • Salt and pepper to taste
  • ½ lb breakfast sausage mild or spicy, your call
  • 1 tbsp butter

For assembly:

  • 4 small flour tortillas or larger if preferred
  • 1 cup shredded cheddar cheese or your favorite melting cheese

For garnish:

  • Fresh chives or parsley chopped (optional)

Instructions
 

  • In a skillet over medium heat, cook the sausage, breaking it into crumbles. Stir occasionally for 5–7 minutes until browned and fully cooked. Transfer to a plate. Leave any browned bits in the pan.
  • Whisk eggs with milk (if using), salt, and pepper. Melt butter in the same skillet over medium heat. Add eggs and gently scramble for 2–3 minutes, just until set. Remove from heat.
  • Lay a tortilla flat. Add sausage, eggs, and cheese to one side. Fold in the sides, then roll tightly. Repeat with the rest.
  • Heat the skillet over medium-low. Place roll-ups seam-side down and cook 1–2 minutes per side until golden and crisp. Press lightly to seal.
  • Slice in half and garnish with chives or parsley, if desired. Serve hot, or wrap in foil to keep warm.
