Sausage, Egg And Cheese Breakfast Roll-Ups

Sausage, Egg, and Cheese Breakfast Roll-Ups are quick, handheld bites packed with sausage, fluffy eggs, and melted cheddar, all wrapped in a crispy tortilla. Perfect for busy mornings or a satisfying snack—ready in under 30 minutes!

Ingredients
  

  • 1 lb breakfast sausage
  • 6 large eggs
  • ½ cup shredded cheddar cheese
  • ¼ cup milk
  • ½ tsp salt
  • ¼ cup black pepper
  • 4 large flour tortillas
  • Butter or oil for greasing

Instructions
 

  • In a skillet over medium heat, cook the sausage, breaking it into small pieces. Stir occasionally until browned and fully cooked. Remove and set aside.
  • In a bowl, whisk together eggs, milk, salt, and pepper until smooth.
  • Add a little butter or oil to the same skillet. Pour in the egg mixture and cook over medium-low, stirring occasionally until softly scrambled. Remove from heat.
  • Lay tortillas flat. Add sausage and eggs evenly across each. Sprinkle with cheddar cheese.
  • Roll each tortilla tightly to keep the filling inside.
  • In the same skillet, heat a bit of butter or oil. Place roll-ups seam-side down and cook for 2–3 minutes, turning to brown all sides.
