Sausage, Egg And Cheese Breakfast Roll-Ups
Sausage, Egg, and Cheese Breakfast Roll-Ups are quick, handheld bites packed with sausage, fluffy eggs, and melted cheddar, all wrapped in a crispy tortilla. Perfect for busy mornings or a satisfying snack—ready in under 30 minutes!
- 1 lb breakfast sausage
- 6 large eggs
- ½ cup shredded cheddar cheese
- ¼ cup milk
- ½ tsp salt
- ¼ cup black pepper
- 4 large flour tortillas
- Butter or oil for greasing
In a skillet over medium heat, cook the sausage, breaking it into small pieces. Stir occasionally until browned and fully cooked. Remove and set aside.
In a bowl, whisk together eggs, milk, salt, and pepper until smooth.
Add a little butter or oil to the same skillet. Pour in the egg mixture and cook over medium-low, stirring occasionally until softly scrambled. Remove from heat.
Lay tortillas flat. Add sausage and eggs evenly across each. Sprinkle with cheddar cheese.
Roll each tortilla tightly to keep the filling inside.
In the same skillet, heat a bit of butter or oil. Place roll-ups seam-side down and cook for 2–3 minutes, turning to brown all sides.
