Sausage And Pepper Casserole

This Sausage and Pepper Casserole is a one-pan meal featuring Italian sausage, bell peppers, onions, and melted mozzarella, baked to bubbly perfection—ideal for busy weeknights or relaxed weekends.

Ingredients
  

  • 1 pound Italian sausage
  • 1 onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 cloves garlic
  • 1 can  diced tomatoes
  • 1 cup shredded mozzarella cheese
  • Salt and pepper
  • Fresh basil or parsley for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C) for even cooking.
  • In a skillet, cook sausage over medium heat, breaking it apart as it browns (5-7 minutes).
  • Add diced onion, sliced peppers, and minced garlic. Cook until vegetables soften (5-7 minutes).
  • Stir in diced tomatoes, season with salt and pepper, and simmer for 5 minutes.
  • Transfer the mixture to a casserole dish and top with shredded mozzarella.
  • Bake for 20-25 minutes until cheese is melted and bubbly, with golden edges.
  • Let cool slightly, garnish with fresh herbs, and serve!
