Rotel Pasta
Rotel Pasta is a creamy, flavorful one-pot meal featuring tender penne, savory ground beef, and spicy Rotel tomatoes, all coated in melted cheddar cheese. Quick, easy, and packed with bold flavors!
- 12 oz penne pasta
- 1 lb ground beef
- 1 can Rotel diced tomatoes with green chilies
- ½ cup chopped onion
- 2 cloves garlic
- 1 cup shredded cheddar cheese
- Fresh cilantro
- Sour cream
- Avocado slices
- Crushed tortilla chips
Cook the Beef: In a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks. Drain excess grease. Season with salt, pepper, cumin, or chili powder for extra flavor.
Sauté the Onion & Garlic: Add chopped onion to the beef and cook until translucent, about 3–4 minutes. Stir in minced garlic and cook for another minute.
Add Rotel Tomatoes: Pour in the Rotel diced tomatoes with their juices. Stir and let simmer for 5 minutes to blend the flavors.
Cook the Pasta: Add penne and enough water (3–4 cups) to fully cover it. Bring to a boil, then reduce heat to medium-low. Cover and cook according to the pasta package, stirring occasionally. Add more water if needed.
Melt the Cheese: Once the pasta is al dente, remove from heat and stir in shredded cheddar cheese until melted and evenly coated.
Serve & Garnish: Divide into bowls and top with cilantro, sour cream, avocado slices, or crushed tortilla chips for extra crunch.
