Roasted Potato Salad

Filled with flavorful ingredients like roasted potatoes, fresh veggies, and a tasty yogurt dressing, it’s a dish that’s sure to satisfy.

Ingredients
  

  • 4 medium potatoes cubed
  • 2 tbsp olive oil
  • 2 tsp rosemary chopped
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1 lb ground beef
  • 2 cloves garlic minced
  • 2 tbsp parsley chopped
  • 4 cups salad greens
  • 12 cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1 cucumber thinly sliced
  • 1 avocado thinly sliced

Dressing:

  • 1 cup yogurt
  • 1 tbsp parsley chopped
  • Salt and pepper to taste
  • 2 tbsp water for thinning optional

Instructions
 

  • Preheat the oven to 400°F (200°C). Place potatoes on a baking tray.
  • Add rosemary, paprika, salt, and olive oil. Toss until well coated. Roast for 25-30 minutes until golden and crispy.
  • In a pan, cook ground beef over medium heat. Season with salt, pepper, and paprika. Cook for 5-7 minutes, then add minced garlic and cook for 2 more minutes. Finish with chopped parsley.
  • In a small bowl, mix yogurt, salt, pepper, and parsley. Add water to thin if needed.
  • In a large bowl, add salad greens, roasted potatoes, cooked beef, tomatoes, red onion, cucumber, and avocado.
  • Drizzle with yogurt dressing, toss to combine, and serve immediately.
