Ritz Cracker Christmas Cookies
Ritz Cracker Christmas Cookies combine buttery crackers, creamy peanut butter, and layered chocolate for a crunchy, festive holiday snack.
- 40 Ritz crackers or any round buttery cracker
- 1 cup creamy peanut butter
- 1 cup white chocolate chips or melting wafers
- 1 cup milk chocolate chips or melting wafers
- Holiday sprinkles crushed candy canes, or festive decorations
Optional Variations
- Swap peanut butter for almond butter cookie butter, or sunflower butter
- Use dark chocolate instead of milk chocolate
- Add crushed pretzels or mini marshmallows to the edges before the chocolate sets
Line a baking sheet with parchment or wax paper.
Spread a thin layer of peanut butter on each cracker and place half on the sheet as bases.
Melt white chocolate in the microwave until smooth.
Spoon or pipe the white chocolate onto the peanut-buttered crackers.
Top each with another peanut-buttered cracker, pressing gently.
Melt milk chocolate until smooth.
Dip each sandwich halfway into the milk chocolate and let excess drip off.
Decorate with sprinkles, crushed candy canes, or mini chocolate chips before the chocolate sets.
