Rich Southern Caramel Cake

Southern Caramel Cake is a soft, buttery layered cake topped with a rich, homemade caramel frosting that’s smooth, sweet, and deeply flavorful.

Ingredients
  

For the cake

  • 2 ⅔ cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • ½ cup vegetable oil
  • 1 cup granulated sugar
  • ¾ cup light brown sugar packed
  • 4 large eggs room temperature
  • 1 tablespoon vanilla extract
  • 1 ¼ cup buttermilk room temperature

For the frosting

  • 1 cup light brown sugar packed
  • 1 cup dark brown sugar packed
  • 1 cup unsalted butter
  • ½ teaspoon salt
  • cup evaporated milk
  • cup heavy cream
  • 2 cups powdered sugar sifted
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F; grease and line two 9 inch pans.
  • Whisk flour, baking powder, baking soda, and salt.
  • Beat butter and oil until smooth and slightly fluffy.
  • Add both sugars; beat until light and fluffy.
  • Mix in eggs one by one, then add vanilla.
  • Alternate dry mix and buttermilk; mix gently.
  • Divide batter; bake 22–28 minutes until done.
  • Cool 10 minutes, then transfer to rack to cool fully.
  • Heat butter, sugars, salt, milk, and cream until smooth.
  • Add powdered sugar and vanilla; mix until spreadable.
  • Layer cakes and spread frosting evenly.
