Rainbow Fruit Cup
Rainbow Fruit Cup is a vibrant mix of fresh seasonal fruits layered in colorful order and finished with a light honey lime glaze, perfect for a refreshing snack or simple dessert.
- 1 cup strawberries diced
- 1 cup mango diced
- 1 cup pineapple diced
- 1 cup kiwi diced
- 1 cup blueberries
- 1 cup purple grapes halved
- 2 tbsp honey
- 1 tbsp lime juice
- Zest of 1 lime
- Fresh mint leaves for garnish
Wash and dice all fruits into small, even pieces, halving the grapes and setting blueberries aside.
Whisk honey, lime juice, and lime zest until smooth and pourable.
Layer fruit in clear cups in rainbow order, pressing gently to keep layers neat.
Drizzle the honey lime glaze lightly over each fruit cup.
Garnish with fresh mint and chill for about 20 minutes before serving.
