Quick Spinach And Feta Grilled Cheese

Spinach And Feta Grilled Cheese is a satisfying twist on classic comfort food, combining garlic-sautéed spinach, tangy feta, and ooey-gooey mozzarella in buttery toasted bread.

Ingredients
  

Filling

  • ½ tablespoon olive oil
  • 1 clove garlic minced
  • ¼ pound frozen chopped spinach
  • Pinch of salt
  • Pinch of black pepper
  • Pinch of crushed red pepper flakes optional

Bread & Cheese

  • 4 slices sandwich bread
  • 2 tablespoons butter
  • 1 cup shredded mozzarella cheese
  • 1 ounce crumbled feta cheese

Instructions
 

  • Sauté garlic in olive oil for 1 minute. Add spinach, salt, and pepper. Cook until dry. Add red pepper flakes if desired. Remove from heat.
  • Butter one side of each bread slice. Set aside, butter-side down.
  • Layer mozzarella, feta, and spinach on two slices. Top with more mozzarella and remaining bread, butter-side up.
  • Cook on medium-low heat for 3–4 minutes per side until golden and cheese is melted.
  • Let rest briefly, then slice and enjoy warm.
