Quick Spinach And Feta Grilled Cheese
Spinach And Feta Grilled Cheese is a satisfying twist on classic comfort food, combining garlic-sautéed spinach, tangy feta, and ooey-gooey mozzarella in buttery toasted bread.
Filling
- ½ tablespoon olive oil
- 1 clove garlic minced
- ¼ pound frozen chopped spinach
- Pinch of salt
- Pinch of black pepper
- Pinch of crushed red pepper flakes optional
Bread & Cheese
- 4 slices sandwich bread
- 2 tablespoons butter
- 1 cup shredded mozzarella cheese
- 1 ounce crumbled feta cheese
Sauté garlic in olive oil for 1 minute. Add spinach, salt, and pepper. Cook until dry. Add red pepper flakes if desired. Remove from heat.
Butter one side of each bread slice. Set aside, butter-side down.
Layer mozzarella, feta, and spinach on two slices. Top with more mozzarella and remaining bread, butter-side up.
Cook on medium-low heat for 3–4 minutes per side until golden and cheese is melted.
Let rest briefly, then slice and enjoy warm.
