- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/2 tsp salt
- 2 large eggs
- 1 cup pumpkin puree
- 3/4 cup brown sugar
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan.
Whisk the flour, baking soda, spices, and salt together.
In another bowl, whisk the eggs, pumpkin, brown sugar, oil, and vanilla.
Add the dry mixture to the pumpkin mixture.
Fold gently until just combined.
Divide the batter evenly among the muffin cups.
Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
Cool for 5 minutes in the pan before transferring the muffins to a rack.
