Pumpkin Spice Cheesecake Bites
Pumpkin Spice Cheesecake Bites are no-bake, creamy pumpkin treats rolled in a spiced graham cracker coating—perfect for a quick, flavorful fall dessert.
For the Cheesecake Filling:
- 8 oz cream cheese softened
- ½ cup canned pumpkin purée
- ¼ cup powdered sugar
- ½ tsp vanilla extract
- ½ tsp pumpkin pie spice
- ¼ tsp ground cinnamon
- Pinch of salt
For the Coating:
- 1 cup graham cracker crumbs
- 2 tbsp brown sugar
- ½ tsp pumpkin pie spice
- ¼ tsp ground cinnamon
- 1 tbsp melted butter
Beat cream cheese, pumpkin purée, powdered sugar, vanilla, spices, and salt until smooth. Adjust sweetness or spice to taste.
Scoop and roll into small balls. Place on a parchment-lined tray. Chill for 1 hour.
Combine graham crumbs, brown sugar, spices, and melted butter in a bowl.
Roll each chilled ball in the crumb mixture until fully coated. Return to tray.
Refrigerate for 30 minutes more. Serve cold for best flavor and texture.
