Pumpkin Spice Cheesecake Bites are no-bake, creamy pumpkin treats rolled in a spiced graham cracker coating—perfect for a quick, flavorful fall dessert.

Ingredients
  

For the Cheesecake Filling:

  • 8 oz cream cheese softened
  • ½ cup canned pumpkin purée
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • ½ tsp pumpkin pie spice
  • ¼ tsp ground cinnamon
  • Pinch of salt

For the Coating:

  • 1 cup graham cracker crumbs
  • 2 tbsp brown sugar
  • ½ tsp pumpkin pie spice
  • ¼ tsp ground cinnamon
  • 1 tbsp melted butter

Instructions
 

  • Beat cream cheese, pumpkin purée, powdered sugar, vanilla, spices, and salt until smooth. Adjust sweetness or spice to taste.
  • Scoop and roll into small balls. Place on a parchment-lined tray. Chill for 1 hour.
  • Combine graham crumbs, brown sugar, spices, and melted butter in a bowl.
  • Roll each chilled ball in the crumb mixture until fully coated. Return to tray.
  • Refrigerate for 30 minutes more. Serve cold for best flavor and texture.
