Pineapple Lemon Drop Cocktail
A bright, tropical cocktail with pineapple and lemon juice, offering a sweet-tart finish. Easy to make and perfect for a refreshing evening sip.
- 3 oz pineapple juice
- 2 oz additional pineapple juice for layering or stronger flavor
- 1 oz fresh lemon juice
- Ice crushed or cubed
- Sugar for rimming the glass
- Lemon wedge or slice for garnish
- Optional: ¾oz triple sec or orange liqueur
- Optional: ½ oz simple syrup or honey
Rub a lemon wedge around the glass rim. Dip it into sugar on a small plate to coat evenly. Set aside.
In a shaker, combine 3 oz pineapple juice, 1 oz lemon juice, and optional triple sec or sweetener.
Add ice to the shaker. Shake hard for 10–15 seconds until chilled and frothy.
Fill your glass with fresh ice. Strain the cocktail in, then slowly pour 2 oz pineapple juice on top for layering.
Add a lemon slice or pineapple wedge. Serve right away and enjoy.
