Pineapple Christmas Balls

Ingredients
  

  • 1 can 8 oz crushed pineapple, drained
  • 2 cups powdered sugar
  • 1 cup shredded coconut
  • 1 cup chopped pecans or walnuts optional
  • 1 package 8 oz cream cheese, softened
  • 1 tsp vanilla extract
  • 1/2 cup maraschino cherries chopped (for garnish)

Instructions
 

  • Step 1. Drain the Pineapple: Begin by draining the crushed pineapple thoroughly, pressing it to remove any excess liquid. This will ensure your mixture isn't too runny.
  • Step 2. Combine Ingredients: In a large bowl, mix together the softened cream cheese, powdered sugar, vanilla extract, and shredded coconut. Stir until well combined.
  • Step 3. Add Pineapple and Nuts: Stir in the drained pineapple and chopped nuts (if using). The mixture should be slightly thick but easy to handle.
  • Step 4. Form the Balls: Using your hands, shape the mixture into small balls, about 1-inch in diameter.
  • Step 5. Chill the Balls: Place the pineapple balls on a baking sheet lined with parchment paper. Refrigerate for at least 1-2 hours or until they firm up.
  • Step 6. Garnish: Once chilled, dip each ball into a small bowl of shredded coconut or roll them in extra crushed nuts. Optionally, top each ball with a small piece of chopped maraschino cherry for a festive touch.
  • Step 7. Serve and Enjoy: Serve chilled and enjoy these tropical delights!
