Pineapple Casserole

Pineapple casserole is a sweet-and-savory southern classic made with juicy pineapple, sharp cheddar cheese, and a buttery Ritz cracker topping. It’s warm, bubbly, and surprisingly addictive—perfect for potlucks, holidays, or casual dinners.

Ingredients
  

  • 1 can 20 oz pineapple chunks, drained
  • 1 can 20 oz crushed pineapple, drained
  • 1 cup granulated sugar
  • 6 tablespoons all-purpose flour
  • 2 cups shredded cheddar cheese
  • ½ cup butter melted
  • 1 sleeve Ritz crackers crushed

Instructions
 

  • Set your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • In a large bowl, stir together drained pineapple chunks, crushed pineapple, sugar, flour, and cheddar cheese until well combined.
  • Pour the pineapple mixture into the baking dish and spread it out evenly.
  • In a small bowl, mix melted butter with crushed Ritz crackers until the texture resembles damp sand.
  • Sprinkle the cracker topping evenly over the pineapple mixture. Bake for 25–30 minutes, until golden and bubbly around the edges.
  • Let the casserole sit for 10 minutes to firm up before serving warm.
