Pineapple Casserole
Pineapple casserole is a sweet-and-savory southern classic made with juicy pineapple, sharp cheddar cheese, and a buttery Ritz cracker topping. It’s warm, bubbly, and surprisingly addictive—perfect for potlucks, holidays, or casual dinners.
- 1 can 20 oz pineapple chunks, drained
- 1 can 20 oz crushed pineapple, drained
- 1 cup granulated sugar
- 6 tablespoons all-purpose flour
- 2 cups shredded cheddar cheese
- ½ cup butter melted
- 1 sleeve Ritz crackers crushed
Set your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
In a large bowl, stir together drained pineapple chunks, crushed pineapple, sugar, flour, and cheddar cheese until well combined.
Pour the pineapple mixture into the baking dish and spread it out evenly.
In a small bowl, mix melted butter with crushed Ritz crackers until the texture resembles damp sand.
Sprinkle the cracker topping evenly over the pineapple mixture. Bake for 25–30 minutes, until golden and bubbly around the edges.
Let the casserole sit for 10 minutes to firm up before serving warm.
