Pecan Pie Cobbler

Ingredients
  

For the filling:

  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 stick unsalted butter melted
  • 2 cups pecan halves

For the cobbler:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 1/4 cup unsalted butter melted

For topping:

  • 1/2 cup pecan halves
  • 2 tablespoons granulated sugar
  • Optional: a scoop of vanilla ice cream for serving

Instructions
 

  • Step 1: Preheat your oven to 350°F (175°C). In a bowl, whisk together corn syrup, brown sugar, eggs, vanilla, and melted butter until smooth. Stir in 2 cups of pecan halves.
  • Step 2: In a separate bowl, combine flour, sugar, baking powder, and salt. Slowly whisk in milk and melted butter to form a smooth batter.
  • Step 3: Grease a 9x13-inch baking dish or casserole. Pour the cobbler batter evenly into the dish. Carefully spoon the pecan pie filling over the batter without mixing.
  • Step 4: Sprinkle the extra pecan halves and sugar on top for added texture and sweetness.
  • Step 5: Bake for 45–50 minutes or until the cobbler is golden brown and the filling bubbles along the edges. Cool slightly, then serve warm with vanilla ice cream if desired.
