Peanut Butter Lunch Lady Cookie Bars

- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup creamy peanut butter
- 2 large eggs
- 2½ tsps vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup powdered sugar
- 2-3 tbsp milk (or cream)
Preheat the oven to 350°F (175°C) and line or grease an 8x8-inch baking pan.
Cream butter, granulated sugar, and brown sugar until fluffy (about 3-4 minutes). Add peanut butter and mix until smooth. Beat in eggs one at a time, then stir in vanilla.
Whisk flour, baking powder, and salt in a separate bowl. Gradually add to the wet mixture, mixing until just combined.
Transfer dough to the prepared pan and spread it evenly.
Bake for 20-25 minutes, until edges are golden and the center is set. Let cool completely in the pan.
Whisk powdered sugar, milk (or cream), and vanilla until smooth. Adjust milk for desired glaze consistency.
