Peaches And Cream Breakfast Bake

A soft, protein-rich breakfast bake made with cottage cheese, oats, and ripe peaches—lightly sweetened and perfectly spiced for a warm, comforting morning bite.

Ingredients
  

  • 2 cups cottage cheese
  • 3 large eggs
  • 2 medium ripe peaches peeled and diced
  • ½ cup rolled oats or almond flour
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground ginger or cinnamon
  • 1 teaspoon baking powder

Instructions
 

  • Preheat to 350°F (175°C) and lightly grease a 9x9-inch baking dish.
  • Whisk cottage cheese, eggs, honey or syrup, and vanilla in a large bowl until smooth.
  • Stir in oats or almond flour, cinnamon or ginger, and baking powder until combined.
  • Gently mix in the diced peaches without over-stirring.
  • Pour into the dish and spread evenly.
  • Bake for 40–45 minutes until golden and set. A toothpick should come out clean.
  • Cool for 10 minutes, then slice and serve warm or chilled.
