Peaches And Cream Breakfast Bake
A soft, protein-rich breakfast bake made with cottage cheese, oats, and ripe peaches—lightly sweetened and perfectly spiced for a warm, comforting morning bite.
- 2 cups cottage cheese
- 3 large eggs
- 2 medium ripe peaches peeled and diced
- ½ cup rolled oats or almond flour
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon ground ginger or cinnamon
- 1 teaspoon baking powder
Preheat to 350°F (175°C) and lightly grease a 9x9-inch baking dish.
Whisk cottage cheese, eggs, honey or syrup, and vanilla in a large bowl until smooth.
Stir in oats or almond flour, cinnamon or ginger, and baking powder until combined.
Gently mix in the diced peaches without over-stirring.
Pour into the dish and spread evenly.
Bake for 40–45 minutes until golden and set. A toothpick should come out clean.
Cool for 10 minutes, then slice and serve warm or chilled.
