This Pancake Sausage Breakfast Bake combines fluffy pancake batter and savory sausage in one golden, comforting casserole perfect for easy family brunches or weekend meals.

Ingredients
  

  • 1 pound breakfast sausage pork, turkey, or chicken
  • 2 cups pancake mix
  • cups milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 1 tablespoon maple syrup optional
  • ½ teaspoon ground cinnamon optional
  • 1 cup shredded cheddar cheese optional
  • Cooking spray or butter for greasing

Instructions
 

  • Preheat & Prep: Heat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Cook Sausage: Brown sausage in a skillet, drain the fat, and set aside.
  • Make Batter: Whisk pancake mix, milk, egg, vanilla, melted butter, optional syrup, and cinnamon until smooth.
  • Assemble: Mix in sausage and cheese, then pour batter into the dish and spread evenly.
  • Bake: Bake for 28–35 minutes until golden and set.
  • Cool & Slice: Let rest 5 minutes before slicing and serving.
