Orange Creamsicle Salad

With a sugar cookie crust, a creamy cream cheese layer, and tangy orange curd, this dessert is the perfect treat for summer!

Ingredients
  

Crust:

  • 3 cups sugar cookies crushed
  • 3 tbsp butter melted

Cream cheese layer:

  • 8 oz cream cheese room temperature
  • 1/2 cup powdered sugar
  • 8 oz whipped topping

Orange curd layer:

  • 2 cups orange juice
  • 6 egg yolks room temperature
  • 2 eggs room temperature
  • 1 1/2 tbsp orange zest
  • 1 cup sugar
  • 4 tbsp butter
  • Pinch of salt
  • 5 tbsp cornstarch
  • 8 oz whipped topping for serving
  • Orange segments for garnish optional

Instructions
 

  • Press crushed cookies mixed with melted butter into the bottom of your baking dish; refrigerate.
  • Mix cream cheese and powdered sugar until smooth, then fold in whipped topping. Spread over crust and refrigerate.
  • In a double boiler, whisk eggs, sugar, salt, orange zest, and cornstarch until dissolved.
  • Add orange juice and cook until thick, about 10 minutes. Stir in butter until smooth.
  • Cool orange curd completely, then spread over cream cheese layer.
  • Top with more whipped topping and garnish with orange segments. Serve and enjoy!
