Orange Creamsicle Salad
With a sugar cookie crust, a creamy cream cheese layer, and tangy orange curd, this dessert is the perfect treat for summer!
Crust:
- 3 cups sugar cookies crushed
- 3 tbsp butter melted
Cream cheese layer:
- 8 oz cream cheese room temperature
- 1/2 cup powdered sugar
- 8 oz whipped topping
Orange curd layer:
- 2 cups orange juice
- 6 egg yolks room temperature
- 2 eggs room temperature
- 1 1/2 tbsp orange zest
- 1 cup sugar
- 4 tbsp butter
- Pinch of salt
- 5 tbsp cornstarch
- 8 oz whipped topping for serving
- Orange segments for garnish optional
Press crushed cookies mixed with melted butter into the bottom of your baking dish; refrigerate.
Mix cream cheese and powdered sugar until smooth, then fold in whipped topping. Spread over crust and refrigerate.
In a double boiler, whisk eggs, sugar, salt, orange zest, and cornstarch until dissolved.
Add orange juice and cook until thick, about 10 minutes. Stir in butter until smooth.
Cool orange curd completely, then spread over cream cheese layer.
Top with more whipped topping and garnish with orange segments. Serve and enjoy!
