One-Pot Cowboy Stew
Cowboy stew is a hearty one-pot meal with beef, kielbasa, veggies, beans, and bold spices—perfect for a filling, fuss-free family dinner.
- 2 pounds ground beef
- 2 packages kielbasa sausage sliced
- 2 garlic cloves minced
- 1 onion chopped
- 2 cans 14.5 oz diced tomatoes, drained
- 2 cans 14.5 oz diced tomatoes with chilies
- 2 cans 15 oz pinto beans, with liquid
- 1 can 15.2 oz corn, drained
- 10 oz frozen mixed vegetables
- 4 baking potatoes diced
- 4 cups water
- 2 teaspoons cumin
- 2 teaspoons chili powder
- Salt and pepper to taste
Heat oil in a large pot over medium heat. Add onion and garlic; cook for 3–4 minutes until softened and fragrant.
Add ground beef, breaking it up as it cooks. Once browned, stir in kielbasa and cook for 2 more minutes.
Mix in both types of diced tomatoes, pinto beans (with liquid), corn, frozen veggies, and potatoes.
Pour in 4 cups water. Stir in cumin, chili powder, salt, and pepper.
Bring to a boil, then reduce heat. Cover and simmer for 1 hour, stirring occasionally, until potatoes are fork-tender.
