One-Pot Cowboy Stew

Cowboy stew is a hearty one-pot meal with beef, kielbasa, veggies, beans, and bold spices—perfect for a filling, fuss-free family dinner.

Ingredients
  

  • 2 pounds ground beef
  • 2 packages kielbasa sausage sliced
  • 2 garlic cloves minced
  • 1 onion chopped
  • 2 cans 14.5 oz diced tomatoes, drained
  • 2 cans 14.5 oz diced tomatoes with chilies
  • 2 cans 15 oz pinto beans, with liquid
  • 1 can 15.2 oz corn, drained
  • 10 oz frozen mixed vegetables
  • 4 baking potatoes diced
  • 4 cups water
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • Salt and pepper to taste

Instructions
 

  • Heat oil in a large pot over medium heat. Add onion and garlic; cook for 3–4 minutes until softened and fragrant.
  • Add ground beef, breaking it up as it cooks. Once browned, stir in kielbasa and cook for 2 more minutes.
  • Mix in both types of diced tomatoes, pinto beans (with liquid), corn, frozen veggies, and potatoes.
  • Pour in 4 cups water. Stir in cumin, chili powder, salt, and pepper.
  • Bring to a boil, then reduce heat. Cover and simmer for 1 hour, stirring occasionally, until potatoes are fork-tender.
