A creamy, fruity cocktail blending pink lemonade, gin, vanilla ice cream, and frozen strawberries—perfect for warm evenings and spontaneous celebrations. Cool, slightly boozy, and wonderfully refreshing.
- 2 oz gin
- 12 oz pink lemonade concentrate frozen
- ½ cup vanilla ice cream
- ½ cup frozen strawberries
- A handful of ice
- Fresh strawberries optional, for garnish
Make sure your pink lemonade concentrate is still frozen or semi-thawed for best texture. Measure out the gin, vanilla ice cream, and frozen strawberries.
Add the pink lemonade concentrate, gin, vanilla ice cream, and frozen strawberries to the blender. Blend on medium speed for 15-20 seconds until the base starts to come together.
Add a generous handful of ice to the blender. Blend on high for about 30 seconds, or until the texture is creamy and smooth with no chunks. It should be the consistency of a thick smoothie—cold, fluffy, and silky.
Pour the mixture into pre-chilled cocktail glasses. The drink will have a soft pink hue with a frosty top layer.
Slice a fresh strawberry halfway up the middle and perch it on the rim of each glass. Or float a small strawberry on top for an Instagram-worthy finish.
Serve right away while it’s cold and creamy. Remember to enjoy responsibly.
