In a large bowl, lightly beat the eggs. Add sugar, salt, nutmeg, and milk, mixing well until combined. Stir in vanilla extract.
Pour the custard mixture into the unbaked pie shell, spreading it evenly.
Bake for 35-40 minutes, or until the custard is set and the top is lightly golden. (A knife inserted in the center should come out clean)
Remove the pie from the oven and let it cool completely.
Before serving, sprinkle the top with some nutmeg for added flavor.
