Slice each mozzarella stick into 3–4 equal pieces. Keep the sizes uniform so they cook evenly.
In one bowl, whisk the eggs and milk together. Place flour in a second bowl and breadcrumbs in a third. Line them up in this order: flour, egg mix, breadcrumbs.
Roll each piece in flour, dip into the egg mix, then press into breadcrumbs. For extra crunch, dip again into the egg and breadcrumbs.
Place the coated bites on a plate and freeze for 15–20 minutes to help the coating stay intact during frying.
Pour 2 inches of vegetable oil into a skillet. Heat over medium until it reaches 350°F. Drop in a breadcrumb—if it sizzles, it’s ready.
Carefully lower 5–7 bites into the hot oil. Fry for about 30 seconds, or until golden. Don’t overcrowd the pan.
Transfer to paper towels to drain. Let them cool slightly, then serve warm with marinara or your favorite dip.
