Monterey Chicken Spaghetti

Monterey Chicken Spaghetti is a creamy, cheesy baked pasta dish loaded with tender chicken, spinach, and a crispy onion topping. It’s a cozy, satisfying meal that’s easy to prepare and perfect for weeknights, potlucks, or make-ahead dinners.

Ingredients
  

  • 12 ounces dried spaghetti
  • 4 cups chopped cooked chicken
  • 1 container sour cream
  • 2 cans unsalted cream of chicken soup
  • 1 package frozen spinach
  • 2 cups shredded Monterey Jack cheese
  • 2 garlic cloves
  • 1 can French Fried Onions

Instructions
 

  • Preheat the oven: Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cook the pasta: Boil salted water and cook the spaghetti until al dente. Drain and set aside.
  • Mix the filling: In a large bowl, combine the chopped chicken, sour cream, cream of chicken soup, drained spinach, 1 cup of Monterey Jack cheese, minced garlic, and half of the French Fried Onions.
  • Combine with pasta: Add the cooked spaghetti to the mixture and toss until fully coated.
  • Assemble the casserole: Spread the mixture into the greased baking dish and top with the remaining Monterey Jack cheese.
  • Add the crunchy topping: Sprinkle the rest of the French Fried Onions evenly over the top.
  • Bake: Place in the oven and bake uncovered for 40-50 minutes, until bubbly and golden brown.
