Monterey Chicken Spaghetti
Monterey Chicken Spaghetti is a creamy, cheesy baked pasta dish loaded with tender chicken, spinach, and a crispy onion topping. It’s a cozy, satisfying meal that’s easy to prepare and perfect for weeknights, potlucks, or make-ahead dinners.
- 12 ounces dried spaghetti
- 4 cups chopped cooked chicken
- 1 container sour cream
- 2 cans unsalted cream of chicken soup
- 1 package frozen spinach
- 2 cups shredded Monterey Jack cheese
- 2 garlic cloves
- 1 can French Fried Onions
Preheat the oven: Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Cook the pasta: Boil salted water and cook the spaghetti until al dente. Drain and set aside.
Mix the filling: In a large bowl, combine the chopped chicken, sour cream, cream of chicken soup, drained spinach, 1 cup of Monterey Jack cheese, minced garlic, and half of the French Fried Onions.
Combine with pasta: Add the cooked spaghetti to the mixture and toss until fully coated.
Assemble the casserole: Spread the mixture into the greased baking dish and top with the remaining Monterey Jack cheese.
