Moist Pineapple Cake With Cream Cheese Frosting

This easy Pineapple Cake is moist, flavorful, and topped with a rich cream cheese frosting.

Ingredients
  

For the cake:

  • 1 can crushed pineapple, undrained 20 oz
  • 2 cups all-purpose flour
  • cups sugar
  • 2 large eggs
  • 2 tsp baking soda

For the frosting:

  • 8 oz cream cheese softened
  • 1 stick butter, softened ½ cup
  • 2 cups powdered sugar
  • 2 tsp vanilla extract
  • 2 tbsp milk

Instructions
 

  • Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  • In a large bowl, mix crushed pineapple (with juice), flour, sugar, eggs, and baking soda until combined.
  • Pour batter into the baking dish and bake for 30-35 minutes, until golden brown and a toothpick comes out clean.
  • Let cake cool in the pan for 15 minutes. Meanwhile, beat cream cheese and butter until smooth.
  • Gradually add powdered sugar, vanilla, and milk, mixing until creamy.
  • Spread frosting over the cooled cake. Garnish with pineapple chunks, slice and enjoy!
