Step 4: While the meatloaf muffins bake, prepare the mashed potatoes. Mash the potatoes with milk, butter, salt, and pepper until smooth and creamy.
Step 5: Transfer the mashed potatoes to a piping bag with a star tip or a resealable plastic bag (snip off one corner for piping).
Step 6: Once the meatloaf muffins are out of the oven, let them cool slightly. Pipe the mashed potato frosting onto each meatloaf muffin. Sprinkle with bacon bits and fresh herbs for garnish.
