Mexican White Trash Casserole

A delightful fusion of Tex-Mex flavors and comfort food classics!

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can Rotel tomatoes with green chilies 10 oz
  • 1 can cream of chicken soup 10 oz
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag tortilla chips, slightly crushed 9 oz
  • 1 can whole kernel corn, drained 15 oz
  • 1 can black beans, drained and rinsed 15 oz
  • ¼ cup diced green onions optional
  • Salsa and sour cream for garnish optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
  • Brown ground beef in a skillet over medium heat, drain excess fat, then stir in taco seasoning per package instructions.
  • Add Rotel tomatoes, cream of chicken soup, and sour cream to the beef. Stir until well combined.
  • In the casserole dish, layer crushed tortilla chips, half the beef mixture, corn, black beans, and half the shredded cheese.
  • Repeat with remaining ingredients.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted and bubbly.
  • Garnish with diced green onions, salsa, or sour cream as desired. Serve hot and enjoy!
