Mexican Tortilla Casserole

Ingredients
  

  • 1 lb. ground beef
  • 1/2 cup diced onion
  • 1 pack taco seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 can refried beans
  • 1 cup prepared rice
  • 1 can Mexican blend corn DRAINED
  • 4-5 large flour tortillas
  • 8 oz of thick chunky salsa mild or hot

Instructions
 

  • Step 1: Prepare Your Baking Dish
  • To begin, preheat your oven to 350°F (175°C) and spray a spring form, round cake pan, or casserole dish with cooking spray. This will prevent the casserole from sticking to the dish.
  • Step 2: Brown the Ground Beef
  • In a large skillet, brown the ground beef along with the diced onion. Once the beef is cooked through, drain any excess fat.
  • Step 3: Add Taco Seasoning
  • Now, add the taco seasoning mix to the cooked beef according to the package directions. This will infuse the beef with delicious Mexican flavors.
  • Step 4: Start Layering
  • It’s time to create the layers of your Mexican Tortilla Casserole. Follow these steps:
  • Place one tortilla in the bottom of your prepared baking dish.
  • Spread one-third of the refried beans over the tortilla.
  • Add one-third of the seasoned ground beef on top of the beans.
  • Sprinkle some shredded cheddar cheese over the meat.
  • Step 5: Continue Layering
  • Repeat the layering process with the remaining ingredients:
  • Place another tortilla over the cheese.
  • Add half of the prepared rice.
  • Spread half of the chunky salsa evenly.
  • Sprinkle half of the drained Mexican blend corn and more cheese.
  • Step 6: Final Layers
  • Continue building your delicious casserole:
  • Place a third tortilla.
  • Add the remaining refried beans and ground beef.
  • Top it off with more cheese.
  • Step 7: Bake to Perfection
  • Cover your casserole dish with foil and bake it in the preheated oven for approximately 40 minutes. Then, uncover it and bake for an additional 10-15 minutes until the top is golden and bubbling.
  • Step 8: Serve and Enjoy
  • Allow the casserole to sit for about 5 minutes before cutting into it. Once plated, feel free to top it with sour cream, diced onion, and shredded lettuce according to your preference.
