Mexican Christmas Cookies
Mexican Christmas Cookies are buttery, melt-in-your-mouth treats coated in cinnamon sugar. Easy to make, festive, and perfect for sharing during the holidays.
For the Dough
- 1 cup unsalted butter softened
- ½ cup powdered sugar
- 1 tsp vanilla extract or ½ tsp almond extract
- 2 cups all-purpose flour
- ½ tsp cinnamon
- ¼ tsp salt
- ¼ tsp baking powder
For the Coating
- ½ cup granulated sugar
- 1 tbsp cinnamon
Preheat oven to 350°F (175°C) and line baking sheets with parchment.
Beat butter and powdered sugar until light and fluffy.
Mix in vanilla or almond extract.
Combine flour, cinnamon, salt, and baking powder; add to butter mixture to form dough.
Shape into 1-inch balls or use cookie cutters.
Bake 12–15 minutes until lightly golden.
Toss warm cookies in cinnamon-sugar to coat.
Cool on a rack and serve or store in an airtight container.
