Melt In Your Mouth Chicken
This Melt In Your Mouth Chicken is incredibly easy to prepare and loaded with rich, savory flavor. Tender chicken breasts are smothered in a creamy, cheesy coating, then baked to golden perfection—ideal for quick weeknight dinners or make-ahead meals.
- 4 boneless skinless chicken breasts
- 1 cup mayonnaise or use plain Greek yogurt for a lighter option
- ½ cup grated Parmesan cheese
- 1 teaspoon seasoning salt
- ½ teaspoon ground black pepper
- 1 teaspoon garlic powder
Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish. Arrange the chicken breasts evenly in the dish, ensuring they don’t overlap.
In a medium bowl, combine the mayonnaise (or Greek yogurt), grated Parmesan, garlic powder, seasoning salt, and black pepper. Mix until smooth and well blended.
Use a silicone spatula to evenly coat the top of each chicken breast with the mixture. Cover them thoroughly but avoid letting it spill into the dish base—it should sit like a thick layer on top.
Place the dish in the oven and bake for 25–30 minutes. Chicken is done when it reaches an internal temperature of 165°F (74°C) and the topping is lightly golden.
For a crispier top, switch to broil mode for the last 2–3 minutes. Watch closely to prevent burning.
Let the chicken rest for 5 minutes before serving. Garnish with chopped parsley or chives if desired.
