Marshmallow Caramel Corn

Marshmallow Caramel Corn is a sweet, chewy popcorn treat coated in a buttery caramel-mallow glaze. Ready in 15 minutes, it’s perfect for sharing—or keeping all to yourself!

Ingredients
  

  • 10 cups popped popcorn
  • ½ cup unsalted butter
  • ½ cup brown sugar
  • ¼ cup light corn syrup
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 1½ cups mini marshmallows

Instructions
 

  • Pop about 10 cups of popcorn and place it in a large bowl. Remove any unpopped kernels.
  • In a saucepan over medium heat, melt butter, then stir in brown sugar, corn syrup, and salt. Cook until smooth and bubbling, stirring for 3–4 minutes to thicken.
  • Remove from heat, stir in vanilla, then add marshmallows. Mix until fully melted and glossy.
  • Pour the caramel over the popcorn and gently toss with a spatula to coat evenly. Work quickly before it cools.
  • Enjoy warm for a soft, gooey texture or let it cool for a firmer bite.
