Marshmallow Caramel Corn
Marshmallow Caramel Corn is a sweet, chewy popcorn treat coated in a buttery caramel-mallow glaze. Ready in 15 minutes, it’s perfect for sharing—or keeping all to yourself!
- 10 cups popped popcorn
- ½ cup unsalted butter
- ½ cup brown sugar
- ¼ cup light corn syrup
- ½ tsp vanilla extract
- ¼ tsp salt
- 1½ cups mini marshmallows
Pop about 10 cups of popcorn and place it in a large bowl. Remove any unpopped kernels.
In a saucepan over medium heat, melt butter, then stir in brown sugar, corn syrup, and salt. Cook until smooth and bubbling, stirring for 3–4 minutes to thicken.
Remove from heat, stir in vanilla, then add marshmallows. Mix until fully melted and glossy.
Pour the caramel over the popcorn and gently toss with a spatula to coat evenly. Work quickly before it cools.
Enjoy warm for a soft, gooey texture or let it cool for a firmer bite.
