Ingredients
  

  • 8 oz block of sharp cheddar cheese
  • 8 oz block of pepper jack cheese
  • ¼ cup olive oil
  • ¼ cup white wine vinegar or apple cider vinegar
  • 1 tsp dried Italian seasoning
  • ½ tsp garlic powder
  • ½ cup sliced salami
  • ½ cup small pickles, like cornichons or dill pickles
  • Fresh herbs, like parsley or basil, for garnish
  • Salt and pepper

Instructions
 

  • Cut the sharp cheddar and pepper jack cheese into bite-sized cubes. Add them to a medium bowl. Slice the salami into bite-sized pieces and chop the pickles if needed. Add both to the bowl with the cheese.
  • In a small bowl, whisk together the olive oil, white wine vinegar (or apple cider vinegar), Italian seasoning, garlic powder, salt, and pepper until well combined.
  • Pour the marinade over the cheese, salami, and pickles. Stir gently to coat everything evenly. Cover the bowl and refrigerate for at least 2 hours (or overnight for more flavor).
  • After marinating, garnish with fresh herbs like parsley or basil. Serve with crackers or bread for a perfect appetizer.
